Dream date with William Fevre Chablis and Ridge.

SJ is one of the most passionate wine people I know. Last week she came into BiBO almost vibrating with excitement so I knew we were in for something special.Man was I right! We tasted:

William Fevre Petit Chablis 2013 – Bright clear gold. Butter salt, lemon and Kumquat. Sunny and bright, intense, acidic attack of chewy, fresh tart fruit with a long. firm finish of clean lemon curd. ❤️ +567537 $$

William Fevre Chablis 2013 – Clear sunny gold. Freesia notes on a lemony background with chalky, wet clay highlights. Glistening bright attack. Clean astringent mouth-feel with a long citrus, stone fruit, mineral finish. +567511 $$

William Fevre Chablis Premier Cru Monte de Tonnerre 2011 – From arguably the best site for 1er Cru Chablis, the colour is glistening clear lemon yellow. Clean Chardonnay nose, flinty, hot steel notes. Super earthy and mineral. Intense Varietal attack. Big bright acidity and a clean, long finish with a steely, chalky profile +705347 $$$

William Fevre Grand Cru Chablis Les Clos 2011 – Golden lemon, diamond clear. Earthy sandalwood notes with lemon and avocado oil. Gorgeous depth of fruit and wildly well-knit fruit, acidity and minerality. ❤️❤️ +720835 $$$

…it was at this point that SJ brought out her wonderfully wine-nerdish dirty secret. No really. She had a soil sample from the vineyards of Les Clos which she most graciously allowed us to sniff and (in my case) lick. That’s not weird.

Following this parade of perfect, beautiful Chablis we moved on to the reds.:

Ch.Le Doyenne Premieres Cotes de Bordeaux 2005 – Dense black ruby hue.  Gorgeous meaty black currant nose. Blend of Merlot, Cabernet Sauvignon & Cabernet Franc. Wide open chewy sweet tannins carry a boat load of fruit and minerality. Insanely rich and wonderfully complex. Great finish!  +771138 $$ Love this. Now on the shelf at BiBO. ❤️

Ridge East Bench Zinfandel 2012 (sustainable) – Deep dark ruby. Perogies with sour cream & chive dominate the nose. Jammy delicious attack. Deep beautiful fruit that stains the teeth. Velvety smooth, lovely and dense with layers of detail. Great structure and finish +653451 $$

Ridge Lytton Springs Zinfandel 2012 – Shiny dark mid ruby hue. Gravelly riverbed soil. Lychee, blueberry. field blend of Zinfandel, Petite Sirah, Cabernet, Merlot. Slick, delicious sweet/savoury attack. Spicy, earthy clean palate. Just classic great Zin blend.spicy long earthy, plummy finish. +513929 $$ ❤️

Ridge Geyserville Field blend 2012 – from gravel and loam. Insanely beautiful colour. Deep clear glistening dark ruby hue. Dark currant, celery, black pepper, white pepper, raw meat aromas. Amazing attack of plush dark berry fruit and wild forest floor. Gosh-dang! Awesome juicy core. Generous and wonderful. Love it.+426379 $$ ❤️

Once again, a privilege to taste these wines. We’ll ignore the guest who, upon tasting his free sample of Grand Cru Chablis, insisted that it should be served colder. I justsaid,”Thank you for the awesome experience SJ!”
